3-304.14(B); Core: Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified by manufacturer (quaternary ammonia 200-400ppm).
Observed buckets of quat sanitizer with rags below 100ppm, PIC stated that it was right on time to change buckets and make new sanitizer and demonstrated normal process. New solution measured at 350ppm. |
