The prep cooler was holding from 49°F during the inspection. CDI-All the TCS foods were placed in the WIC to 41°F. TCS foods will be held in the WIC until the prep cooler and the prep cooler has been repaired to hold at 41F or below. DO NOT USE the prep cooler to hold any TCS foods until the new prep cooler has been repaired or replaced.ONLY hold food in the WIC. |

4-301.11 Cooling, Heating, and Holding Capacities - Equipment (Pf): There shall be enough cold holding equipment to keep TCS foods at 41F or below. The prep cooler was not holding foods at 41 F or below.The upright cooler was also broken and could not be sued at backup for the prep cooler. ONLY store TCS foods in the WIC until the prep cooler has been repaired or replaced. I will be back in 10 days to verify that the establishment has enough cold holding equipment. |
