Increase cooling capacity by getting beer cooler approved by EHS or limit menu items. CDI-PIC will limit menu to one entree per day until beer WIC is approved by EHS. Continued use of unapproved beer cooler and non-compliance of permit conditions could result in suspension of permit. |

3-305.11 Food Storage - Preventing Contamination from the Premises (C) Observed multiple large containers of food stored 4 inches off the floor in the unapproved beer walk-in cooler. Food should be protected from contamination by storing food 6 inches above the floor. CDI-There was no evidence of contamination of food and food were relocated. REPEAT VIOLATION Also Observed a large pot of rice soaking in water stored uncovered in between the dirty veggie prep sink and the ice machine. Food shall be stored in a way it is protected from contamination such as in a clean dry location away from splash, dust, or other contamination. CDI-There was no evidence of contamination and pot of rice was relocated to prep table. Also observed uncovered panner cheese in the 1DRIC exposed to contamination. Store food to prevent contamination from the premises. CDI-PIC voluntarily discarded cheese.
