General CommentsEHS provided an in-service to new employee and PIC to address all risk factor observed during the inspection. EHS recommend reviewing permit conditions, hand washing procedures, food storage, cleaning and sanitizing, glove usage, and all risk factors violations from previous inspections.

Increase cooling capacity by getting beer cooler approved by EHS or limit menu items. CDI-PIC will limit menu to one entree per day until beer WIC is approved by EHS. Continued use of unapproved beer cooler and non-compliance of permit conditions could result in suspension of permit.

REPEAT VIOLATION Also Observed a large pot of rice soaking in water stored uncovered in between the dirty veggie prep sink and the ice machine. Food shall be stored in a way it is protected from contamination such as in a clean dry location away from splash, dust, or other contamination. CDI-There was no evidence of contamination and pot of rice was relocated to prep table. Also observed uncovered panner cheese in the 1DRIC exposed to contamination. Store food to prevent contamination from the premises. CDI-PIC voluntarily discarded cheese. 3-307.11 Miscellaneous Sources of Contamination (C) Observed multiple in use containers with old stickers residue. Food and food contact surfaces shall be protected from contamination at all times. Clean containers or discontinue ide of container. 3-305.12 Food Storage, Prohibited Areas (C) Observed foods for sale stored in unapproved beer walk-in cooler and in a non-permitted area. Foods may not be stored in unapproved areas. CDI-PIC removed foods from unapproved beer cooler. REPEAT VIOLATION
