4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P)- Observed on the East Side, the quat sanitizer solution was being mixed with cold water at 55F and a concentration below 200ppm. CDI- Staff is able to get sanitizer from the West Side. Quat sanitizer solution shall be at a minimum of 75F and between 200-400ppm in concentration.
4-602.11 Equipment Food-Contact Surfaces and Utensils - Frequency (C)- Observed on the East Side, some build-up on the ice bins. Needs to be cleaned. Equipment such as ice makers and bins shall be cleaned at a frequency to keep them clean. |

CDI- Had staff move their water. Employee drinks shall be stored in a manner to prevent contamination of food. |
