2-401.11 Eating, Drinking, or Using Tobacco (C) - EHS observed a employees beverage uncovered on the bottom shelf of a prep table beside exposed single service articles and another employees beverage being stored on a shelf above a prep table actively being used to bread raw chicken. Employees beverages should be covered with a lid and stored in a manor that wont pose a contamination risk to exposed food, clean equipment, single service articles of food contact surfaces. |

3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) - EHS recorded food in the prep unit between 59-60 degrees F. EHS observed the units thermostat off. When PIC pulled the unit away from the wall, EHS and PIC observed the outlet not plugged in fully. PIC plugged the unit in and EHS recorded air temperatures below 41 degrees F. PIC voluntairily discarded the food in the prep unit since it was unknown how long the unit had been unplugged. EHS observed lettuce, spring mix and spinach at the salad bar at approximately 57 degrees F. PIC checked the compressor and saw that the unit was turned off. PIC voluntarily discarded the salad ingredients and turned the unit back on. EHS recorded an air temperature below 41 degrees F before leaving. All cold holding equipment must be turned on and be capable of holding food at 41 degrees F or less.
CDI: Food was voluntarily discarded in refrigeration that was not turned on. EHS recorded air temperature at the end of the inspection of 41 degrees F or less. Monitor equipment more thoroughly to make sure it is on and working as intended. |
