4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. -Pf Observed rice at 123F and another at 140F. It was in a container of ice. PIC said they are cooling it down. EHS explained they are not allowed to cool due to lack of cooling equipment and space. CDI-PIC reheated to 170F and above and will keep it hot. |
