General CommentsObserved empanada folding today during inspection. Empanadas are then placed on a speed rack until the rack is half full and then the rack is moved to the freezer. Through discussion with PIC and staff, it takes approximately 30 min to fold a sheet pan worth of empanadas. If one person is folding, it will take nearly the 4 hours of cooling time to allow for items to cool to 41F. EHS and PIC discussed that product should be cooled quickly after prep. EHS temped products tat 67-64F today during the inspection. PIC stated he will work on a procedure that limits the time product is out and that gets the product cooled within the 4 hours from being prepped/folded.
