General CommentsMFU inspected at 307 W Tremont Ave. (PIns Mechanical Parking lot. EHS suspects MFU is partially cooking wings at commissary and being cooled before being placed on MFU for cooking in fryer and serving. Per conversation with PIC, Wings are baked at 325F for approximately 15 minutes before placed in walk in cooler to cool down. PIC was stated he does not take temperatures of wings before cooling. EHS observed wings being held on prep counter of MFU at 62F. PIC stated they were cooked 3 or 4 hours ago and cooled briefly before bringing on MFU. PIC voluntarily discarded wings. EHS educated PIC that wings must be fully cooked to at least 165F prior to cooling at commissary or approval must be obtained from Health Department for partially cooking wings. PIC stated he understood.
