Inspected at Pins Mechanical Company 307 w Tremont. According to permit, “This MOBILE FOOD UNIT is prohibited from the process of cooling prepared foods. Installed refrigeration shall be reserved to maintain temperatures as specified in Chapter 3 of the NC Food Code Manual.” EHS told PIC to not cool new menu item, chicken wings, from 135F to 41F on MFU. Cooling from 135F to 41F must be done at commissary.
