General CommentsEHS discusses TPHC labels with sauce for variance with PIC. Staff is directed to place label at sauce denoting the time it left temperature control. Variance stipulates 24 hour hold time following removal from temperature control, but automatically printed labels onsite display a “prep time” corresponding with initial removal from can into opened containers in WIC. PIC states they will label sauces by hand with the time they left temperature control and 24 hour hold begins.
