3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed pickled figs with 9/1 date label being held for up to 30 days. PIC explained that figs are dehydrated and cold pickling brine is added. Because this rehydrates something that was previously heat treated, 7 day expiration applies. If PIC chooses to use fresh figs with no heat treatment process and placement into cold brine then 7 day expiration does not apply. CDI PIC discarded.
