4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P - Observed the sanitizer solution of the 3 compartment sink sanitizer basin to be testing at <50ppm of quaternary ammonia. After emptying and refilling the basin it was observed still <50ppm and no sanitizer solution was observed going through the hose. Sanitizer was only able to go through the hose when the PIC “pumped” the bottle while the dispenser was on and would not pull any sanitizer when left alone. Emergency work order placed with the company coming today (6/18) to conduct the repair. Bleach is on site and EHS demonstrated how to properly make a sanitizer solution using the bleach bottle as a temporary fix until the repair for the sanitizer dispenser can be made. 3 day VR to observe compliance.

4-601.11(C ) Keep non food contact surfaces of equipment clean to avoid build up of dust, food residue or debris.4-602.13 Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues. - Observed labels on the plastic insert containers stored as clean throughout the facility. Container design and placement of the labels does not allow them to contaminate the food contact surfaces of other containers when stacked and stored as clean. EHS emphasized the need for the facility to be able to remove the labels during the cleaning process. REPEAT. |
