A dirty pizza/stromboli dough pan and a dirty metal food container were being stored on the floor during the inspection. Drainboards, utensil racks, or tables large enough to accommodate all soiled or cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing. The owner relocated the pan and container off of the floor during the inspection. CDI |

6-501.12 Cleaning, Frequency and Restrictions (C)
The flooring beneath the pizza prep unit has debris on it and needs cleaning. The metal shelving above the cash register also has dust on it and needs cleaning. The outside of the unit’s trash can has residue on it and needs cleaning as well. Physical facilities shall be cleaned at a frequency necessary to keep them clean. |
