General CommentsUpon initial entry at inspection, EHS observed PIC making date marks for TCS food items in WIC. EHS had observed items in WIC without labels, as well as items properly labeled for previous dates of preparation. Upon further questions to PIC, EHS was informed that labels were being prepared for food items either prepared the previous evening or the morning of the inspection. None of the items being labeled at time of inspection had been opened or prepared more than 24 hours prior to the time of inspection. EHS discussed suggested improvements to date marking with PIC; food that is expected to be held for sale more than 24 hours after being opened or prepared should ideally be labeled on the day of being opened or prepared. Date marking and disposition have improved considerable from previous inspections.
