CDI- Operator was able to add more chlorine to increase the concentration to 50ppm. When using chemical sanitizers, the solutions shall meet manufacturer's specified concentrations. When checked, the jar was opened 3-days prior to inspection. The jar had the manufacturer's instructions to "Refrigerate Once Opened". CDI- Salsa was voluntarily discarded. Foods marked Refrigerate After/Once Opened" shall be cooled and maintained at 41F once opened.
31 1 Water and ice from approved source No No Yes 5-101.11 Approved System - Source (P)- When checking the water for chlorine after the last visit resulting in a Immediate Permit Suspension due to Unapproved Water Source; Observed that the water had a chlorine concentration of 0.00ppm from the taps. After calling the Owner, they stated that the operator was at the commissary early that morning and filled up the tanks and additional jugs with water. When checked, the jugs measured 0.39ppm of chlorine which is within the standards for municipal water sources that the commissary uses. Concluded that the operator filled up the jugs at the commissary that morning, however did not fill up the water tanks of the MFU and filled them up at the set-up location or another location using a non-municipal water source. Will need to dump the water in the storage tank and refill with water from an approved source. Until then, the MFU shall only use the jugs of water which were filled from the commissary. Once empty, the MFU shall cease operations until more water is received from the approved source at the commissary. Water shall be obtained from an approved source. ~VERIFICATION REQUIRED~ 24 HOURS If not corrected when checked, Permit actions will be taken.
