3-305.11 Food Storage - Preventing Contamination from the Premises (C): Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination. Noted plumber cleaning out a drain. The machine was throwing dirty drain water toward the sushi case (within 5ft). PIC covered the case the protect it from the splash. Keep the case covered until the plumber is done and cleaned up. |
