3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed corn cooling on the speed rack in the preparation area at 80 F. Items moved to walk in by staff for cooling. The method isn’t quickly cooling the corn. Cooling rate was .35 degrees per minute and should be closer .54 degrees per minute or higher. Place corn in the walk in on the shallow pan being used once the item has reached 135 F. Also discussed, removing corn from the cob while still hot and then placing in the walk in for cooling which increase the cooling rate.
