Equipment food contact surfaces and utensils shall be clean to sight and touch. CDI,educated and manager cleaned surface.
4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness-P. Observed the bucket of sanitizer used in the kitchen reading at 0 ppm for their Quat sanitizer. Maintain sanitizer at correct concentrations when being used to sanitize. CDI, sanitizer emptied out bucket and new sanitizer put in. Education. |
