The ambient temperature of the server reach-in cooler at 50F. Maintain equipment in good repair. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted. TCS foods may not be stored in these units until the units can maintain 41F or less. All TCS foods above 41F were voluntarily discarded.
