General CommentsGreat job keeping raw and ready to eat foods separated by one employee handling raw food and one employee handing ready to eat food. Great job date marking ready to eat food. New ice machine lid and gaskets for reach-in coolers observed. No changes to equipment, menu, food processes, emails, hours, phone numbers, water, sewer, etc. It is very important to discuss employee health reporting requirements with food service staff often to help prevent food borne illness. PIC needs to discuss proper cooling methods with food service staff. Recommend logging start temperatures and time cooling begins. Quat sanitizer bucket for kitchen 150PPM. Bleach dishmachine 100PPM.
