CDI - EHS discussed storage order with PIC and rearranged RIC contents to avoid potential contamination. EHS provided reach in cooler storage order chart in Spanish.

3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed one (1) bin of cooked rice in prep unit with non date mark. All other items within unit were date marked properly. CDI - EHS confirmed date of preparation for rice (12/02) with PIC and affixed date mark to bin.
