3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed chicken skins date marked for 6/2, PIC stated they were frozen and removed on 6/12. Tofu skewers without date in cooler drawer, PIC stated these were prepped yesterday. Observed cooked corn prepped on 6/5, exceeding the 7 days. CDI - PIC properly date marked chicken skins and tofu skewers. PIC discarded the corn.
