Mash potatoes cooling in RIC tightly wrapped at 98F PIC stated that they had only been cooling for around 25 minutes. CDI- mash potatoes where removed from cling wrap and began cooling properly, one hour later they were at 84, it was portioned into smaller containers to reach 70 within 2 hours.
