Observed foods such as potato salad and sour cream placed directly in to constant use equipment exposed to open air environment such as prep units that are not made for cooling. Ensure that these foods are broken down in to smaller portions and placed inside of walk in cooler to cool before placing in constant use equipment, due to constant use equipment not being designed to use for the cooling purposes.
