General CommentsFacility has improved understanding of temperature control and TPHC. Continue working with staff on requirements of holding foods using TPHC. Keep monitoring for discard.

The food shall be discarded after the food has completed its 4 hour hold time, if the food is in unmarked containers, or marked with a time that exceeds the 4 hour time limit. -P Observed rice and other TCS foods from buffet line carried over to the next meal service by cooling in WI. CDI - PIC educated about TPHC requirements to discard once foods are placed on TPHC. Per PIC, foods that are no held using TPHC are hot held until placed on TPHC. PIC verified that foods in WI were on TPHC and not held in hot box before cooling. Foods voluntarily discarded and staff trained on when to discard foods. -1.5-

Other insects not present today. Cardboard has been removed and additional pest control has bee performed to help with previous issue. Maintain to control flies. -2-
