General CommentsEHS observed cooling of shredded cheese from room temperature. While the utilized cooling method observed (cooling open within functioning sealed prep top) was effective at cooling the TCS food, ECS has observed cooling and cold holding violations within the establishment in previous reports and inspection. EHS has provided the establishment with cooling charts for cooked and room temperature foods. It is the recommendation of the EHS that the facility begin utilizing regular temperature checks, as well as properly sealed cold holding equipment, so as to avoid temperature increases to cold held TCS foods. Should cold held TCS foods be observed above 41F, food shall be cooled to 41F within 4 hours.
