22 0 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed top of main prep unit holding TCS foods above 41F, see temperature chart. EHS found that TCS products stored in reach in portion of unit is all at 41F or below, while top of unit is unable to maintain TCS foods at 41F or below. PIC believes issue could be related to lid being left open during service, EHS instructed PIC and employees to keep lid closed for extended period of time to see if TCS foods dropped in temperature. EHS confirmed that after 20-30 minutes, products dropped at least 2-3 degrees F. CDI- products at top of line were flipped, all TCS foods at 41F at top of line after lid remained closed for extended period. PIC stated he will discuss with employees, ensure that top lid remains fully shut during non-peak service times. PIC believes there also may be an issue with airflow in this unit, will clean coils and coordinate with Whaley for service if needed.
