General Comments

Most TCS food are pre-cooked other than the hamburger. At the time of inspection, observed bee lamb and bratwurst heated for immediate service. Lighting in the food prep area has increased to 75FC. PIC has stated that she wants to replace the reach in cooler with a prep table for better flow on the mobile food unit. PIC should send over the specification sheet for the unit to sanda.oo@cravencountync.gov
