33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes Yes No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed containers of tomato and cucumber salad cooling in one of the lowboy coolers inside the kitchen, not meeting the cooling rate. Observed containers of tomato and cucumber salad cooling inside the WIC, from the same batch prepared this morning, not meeting the cooling rate. EHS noticed these metal pans were covered with their respective lids. PIC stated they arrive here to start prep at 8:00AM, so the tomato and cucumber salad were placed in both units after 8:30AM. CDI: Tomato and cucumber salad container lids were removed to allow cold air flow, since they still had time in the 4-hour window to cool the food product down. REPEAT VIOLATION. *Note: Although a repeat violation, EHS not deducting full points since only one food item was observed not meeting the cooling rate, and other cooked TCS food items did meet cooling rate (pickled onions, fiery broccoli, roasted veggies). Ensure proper wash/rinse/sanitize steps are being followed for all multi-use equipment and utensils at the 3-compartment sink to where the sink basins are not over-crowding and ensure all three solutions are maintained clean.
