General CommentsEHS spoke with PIC about cleaning frequency of cutting boards that were being used as a FCS during inspection. PIC stated that they were cleaned once a day, at night. EHS educated PIC on ensuring cutting boards are W/R/S at least every 4 hours. At time of inspection, they had not been in use for more than 4 hours. No violations marked today. EHS observed facility cooking burger patties on the flat top to 141-167F and then placing in hot holding unit until they were ready to go out for orders and then finishing them off in the oven. EHS discussed best practices with PIC, which is to fully cook items up to temperature (155F) on flat top or remove items from flat top and place directly into oven instead.
