3-501.11 Stored frozen foods shall be maintained frozen.
Observed multiple food items stored towards the top inside the freezer chest temping above frozen temps (see temp chart), while the frozen items underneath and towards the bottom were truly frozen at 32F or below. EHS observed that the freezer chest sliding door was not being completely closed anytime the PIC opened it, which could potentially be the reason.
CDI: PIC voluntarily discarded the frozen cooked plantains that were temping above 41F, and PIC moved some of the frozen food items into the standing reach-in freezer to allow more air flow within the freezer chest.
3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf
Observed a bain marie of cooked corn on the cob stored inside the lowboy cooler, tightly covered with plastic wrap. PIC stated this is usually how she cools this down.
CDI: EHS had PIC remove the plastic wrap to allow proper air flow, and observed cooked corn met the proper cooling rate.
