General CommentsThermometer calibrated using ice bath method. Thermopen is at 32F in ice bath. DeltaTrak at 32F in ice bath. **Facility has installed splash guards at both prep sinks where prep table has been placed between.

All raw shell eggs stored at front chef drawer were at 68F. Chef drawer unit thermometer stated between 40-41F. REHS DeltaTrak thermometer at 65F when held in drawer. Cold hold temperatures shall be maintained at 41F or less. CDI - All shell eggs in drawer (approx. 2 dozen eggs) were voluntarily discarded. PIC stated they will not use unit until refrigeration has been fixed.

Observed multiple sauces that were in bottles that did not have labels and were not easily idenfiable. A seasoning was removed from original container and placed into new container without label. All foods and food ingredients that are not readily and unmistakably recognized, such as dry pasta, must be labeled with common name of food. This is especially important on foods such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar.

The PREMISES shall be maintained free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES.

Reach-in freezer does not currently work. EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2. No points taken at this inspection. Large chef drawer was put out of operation and work order put in. Tall reach-in freezer currently has a work order put in, however items are on backorder.
