6-202.15 Outer Openings, Protected (C) (D2) If the windows or doors of a food establishment are kept open for ventilation or other purposes the entry of the kitchen shall be protected by a door or air curtain to protect against flying insects. A air curtain, mesh screen need to be added to the solid kitchen door to protect against flying insects when the garage doors on the outside of the establishment are open, or keep door closed. Both doors were open and flies were observed in the kitchen area.
