3-304.14 Wiping Cloths, Use Limitations (C)
A wiping cloth (not in active use) was being held inside of bleach sanitizer with a chlorine concentration of 0 ppm. Cloths in-use for wiping counters and other equipment surfaces shall held in chemical sanitizer solution within the required concentration range. For bleach/chlorine-based sanitizer solutions, the required concentration range is 50 ppm to 200 ppm. An employee added bleach to the sanitizer bucket, and a final chlorine concentration of 50 ppm was observed. CDI |
