The guacamole (46 F) at 3:00 pm was made 30 minutes ago and put in the make unit to cool. Cooling shall be accomplished in accordance with the time and temperature criteria by using one or more of the following methods based on the type of food being cooled: (1) Placing the food in shallow pans, (2) Separating the food into smaller or thinner portions, (3) Using rapid cooling equipment, (4) Stirring the food in a container placed in an ice water bath, (5) Using containers that facilitate heat transfer, (6) Adding ice as an ingredient, or (7) other effective methods. CDI - Both items were moved to the 2-door upright freezer to cool, and gauc reached below 41 F, and the salsa verde was on the way to 41 F and would meet given the cooling parameters.

A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean.
