A pan of cooked meatball and a pan of raw chicken gizzards were observed with temperatures ranging between 47 F and 49 F in one of the treach in coolers. EHS took an ambient temperature of the reach in cooler and it was observed with a temperature of 58 F. The cooked meatballs were 47 F and the PIC voluntarily discarded. The PIC was asked to remove all of the food items from the reach in cooler and place in the secondary reach in cooler. CDI |

4-301.11 Equipment for holding cold food shall be sufficient in capacity to maintain food temperatures at 41F or less.
One of the reach in coolers was not capable of holding a temperature of 41 F or less during today's inspection (as stated in violation #22). The PIC stated that they have been having issues with that cooler and have had the motor replaced on it. Since the restaurant has extra refrigeration units to properly hold their food items a verification visit will be done between today's date and 3/30/26 to verify if the unit has been either service or removed from service. |

A direct connection is present between the 3-compartment sink’s drain and sewage piping. A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Facility was permitted prior to 2012.
