4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) Observed chlorine sanitizer in both the 3-bay and in the bucket had a concentration between 10 ppm to 50 ppm. Chlorine sanitizer shall have a concentration of 50 ppm to 100 ppm. Staff remade both sanitizer and had concentration of 50 ppm. No points taken since sanitizer was not being actively used. |

6-303.11 Intensity - Lighting (C) Observed at dish wash area has a reading of 30 lux, the cook area under hood has 38 lux at counter top level, and at the prep island has a reading of 10 lux. The light intensity shall be at least 215 lux at a distance of 30 inches above the floor in area used for handwashing and ware washing areas. Discussed issue with owner. |
