2-301.15 Only wash hands in handwashing sink. -PF Employee observed washing hands in prep sink. Employee also did not use soap and she was washing her hands with gloves still on hands. Employees must take off gloves, wash hands only in hand washing sinks, use soap and lather on hands for 10-15 seconds, then rinse hands, and then dry hands with paper towel and use the paper towel to turn off the faucet. CDI - Employee educated on hand washing and she removed gloves and washed hands correctly. |

3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Pulled chicken in drawer cooler measured 55F. Also, ribs in green sauce measured 48F in upright cooler. PIC stated these items were warm from being pulled out for orders during lunch. CDI - PIC moved items to ice bath to cool quickly.
