If using vegetable wash use test strips to ensure proper concentration of vegetable wash. Vegetable wash was 0ppm. All fruits and vegetables washed prior to use. Hot water at 3 comp sink was 109F. Wash solution shall be maintained at 110F or greater. Facility uses Kay Chemical dish wash detergent which says to use at 70F or greater.
