ONIONS, TOMATOES, MUSHROOMS, MOZZERELLA, BAGGED CHICKEN GREATER THAN 41F IN PIZZA PREP UNIT. PIC HAD PLACED 4 PANS OF COOLING SAUTEED ONIONS IN COOLER AND CONSEQUENTLY HEATED TEMPERATURE OF THE BOX AND THE FOOD ITEMS INSIDE. EACH ITEMS WAS REMOVED FROM THE UNIT AND PLACED IN WALK -IN FREEZER TO BRING TEMPERATURES DOWN. TOMATOES, MUSHROOMS, ONIONS RECHECKED AND WERE HOLDING AT 41F AND BELOW. MOZZERELLA CHEESE, CHICKEN WERE STILL IN WALK-IN FREEZER COOLING AT END OF INSPECTION. ALL FOODS WERE WITHIN DATEMARKING COMPLIANCE AND ALLOWED TO REMAIN IN SERVICE GIVEN THE SHORT TERM TEMPERATURE RISE AND RESOLUTION. ISSUE CORRECTED DURING INSPECTION. NO POINT DEDUCTION GIVEN THIS IS A DIFFERENT COLD HOLDING ISSUE THAN AT PRIOR INSPECTION. |
