General CommentsDuring inspection it was observed that facility removed one of the two prep sinks located in the kitchen. The facility replaced the prep sink with a prep table. EHS stated that this was okay, however permit conditions had to be updated to reflect the change. The following condition was added to the permit: • This FOOD ESTABLISHMENT shall separate the processing of READY-TO-EAT FOODS from the processing of raw animal foods as there is limited approved food preparation space and/or available sink. If the operation cannot be supported safely, additional equipment will be required. Facility is required to develop an SOP for the use of the single prep sink. Detailing how the sink will be used in prep and how cross contamination will be prevented. Facility is now required to install a splash guard between the hand sink and prep table.
