3-501.13 Thawing (Pf) Sliced turkey was out thawing at room temperature. Immediately corrected by relocating to the cooler.
Time/temperature control for food safety food shall be thawed:
A) under refrigeration that maintains the food temperature at 41F or less
B) completely submerged under running water at 70F or below with sufficient velocity to agitate and float off loose particles in an overflow
C)As part of the cooking process if the food that is frozen is cooked as required. |
