CDI: PIC was told to move items to ensure the raw animal foods were not stored above the ready to eat food items.

6-501.12 Cleaning, Frequency and Restrictions (C)
-Flooring in the kitchen and dish pit area is beginning to show signs of wear and chipping paint, creating areas that are not easily cleanable and easy to trap dirt and other debris. Scrape, clean and refinish the flooring.
-A hole in the wall where the old water fountain was located has a rag shoved in the hole. Patch and cover this hole so it is smooth and easily cleanable.
-The prep sink in the prep kitchen area had come detached from the wall. Patch, reattach and paint wall to be smooth and easily cleanable and seal behind sink so water cannot splash behind the fixture.
-Clean floors under large equipment (especially under the storage racks in the walk in cooler).
Physical facilities shall be maintained in good repair. Floors, walls and ceilings shall be maintained smooth, durable, easily cleanable and nonabsorbent in areas subject to moisture).
(A) PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean. |
