General CommentsFor Mabomen sauce, EHS and PIC discussed cooking it, placing it in pint containers for portions and then using ziploc bags in the water bath or the ROP method with the date AND time written on each bag that a vacuum is pulled on. Those ROP products are only good for 48 hours so the time AND date are required. Items held past 48 hours regardless of temperature in ROP must be discarded.
