4-302.13 Temperature Measuring Devices, Manual Warewashing (Pf). When an establishment has a hot water (high temp) dish machine, establishment must have an irreversible registering temperature indicator (high temp dish machine thermometer) for measuring utensil surfaces temperature. Establishment’s high temp dish machine thermometer was not working and was told to send it in pony mail to be replaced. Establishment is currently using the thermometer on the dish machine to check the temperatures of the dish machine. These thermometers that are on the machine are not always accurate. Establishment may use one of the old food temp thermometers to check the temperature until a new one is provided. A new high temp dish machine thermometer must be replaced or ordered with 10 days. EHS will have to either see a receipt of where the thermometer has been ordered or a photo of the purchased thermometer must be emailed to Christin.coats@randolphcountync.gov. If a photo is not emailed to EHS within 10 days EHS will have to return to see that the thermometer has been purchased. Day 10 is March 27,2026. |
