3-501.15 (B)(2) Core; When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the FOOD. Observed pan of ground beef, pan of shredded cheese, and deep pan of tomato paste tightly covered cooling in walk-in 30 minutes. Pans containing beef and cheese were uncovered, tomato paste was transferred to uncovered shallow pan during inspection to allow for proper cooling.
3-501.15 (A)(1-7) Priority Foundation; Cooling shall be accomplished in accordance with the time and temperature criteria specified under § 3-501.14 by using an effective method. Observed milk cartons cooling in grab n go case 20 minutes. Person in charge transferred milk to be cooled rapidly in walk-in cooler before placing in display case. |
