Observed unclean boxes of gloves and parchment paper on shelf under wing sauce station beside trash can. PIC voluntarily discarded the unclean boxes during inspection. |

4-501.11 (B) Core; EQUIPMENT components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Observed prep top doors in bad repair at the hinges; observed new door gasket not sealing tightly and ice accumulation inside reach-in freezer. PIC placed service order for prep-top doors prior to inspection and to place order for freezer gasket sealing repair as needed. No points deducted today. |
