Observed cut spring mix stored tightly sealed in plastic wrap in the cooling process 35 minutes at 45F. Spring mix uncovered and divided into thonner portions to facilitate the cooling process during inspection. Observed chopped tomatoes stored covered in the cooling process in walk-in cooler stored covered. Tomatoes then were moved to prep top during the cooling process. Container of ice added beneath tomatoes to facilitate the cooling process. |
