General CommentsFacility had a TPHC log however, there were no procedures for log. Log has a start and end time only. EHS left filled out TPHC procedure sheet with PIC. Facility will use TPHC 6 hours 11:00am until 5:00pm and 4 hours 5:00pm until 9:00pm. Facility will start first TPHC from 11am-5pm checking temps at 4 hour mark (3pm) to ensure food will not reach 70F. If food reaches 70F at 4 hour mark food will be voluntarily discarded. Facility will discard food regardless of time placed on cold line during the first TPHC holding at 11pm until 5pm. Tape with date, start and end time is how facility will label cold line. EHS went over this with PIC, PIC understood and agreed. At the end of night all food on cold line will be discarded. EHS spoke with Manager over phone and per manager TPHC was not being used at facility. Facility had a TPHC log as stated in above notes.
