3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed many TCS items in RIC as well as the ambient temperature holding above 41F (refer to temperature chart). PIC stated 2 hours prior items were 41F below and they have been going in ant out of cooler all morning for food preparations. All TCS items were moved to the back reach in coolers and freezers and all reached 41F or below within an hour. VR- A VERIFICATION VISIT WILL BE CONDUCTED WITHIN 3 DAYS TO ENSURE COCA COLA REACH IN COOLER HAS AN INTERNAL TEMPERATURE OF 41F OR BELOW AND TCS FOOD IN COLD HOLDING IS AT 41F OR BELOW.
